When one molecule of glycerol undergoes condensation with three molecules of fatty acid,
a triglyceride is formed, in this case tristearin.
Triglycerides are not a true polymer because there is a fixed size the molecule can reach (three ester linkages). Most polymers are formed head-to-tail and so can expand until the reaction is terminated or the monomer is used up.
